Tacos out of a box?…

Tonight I was in a hurry so I made tacos out of a box instead of making it myself… Fantastic World Foods

I found a few boxes of vegan mixes at HyVee last time I went there.  (For all you lovely people who aren’t from a small town in the Midwest Hyvee is a small-ish grocery store that has a health foods section, it’s actually an awesome whole foods section for a local grocery.)  I haven’t been big on making processed foods lately but I was in a hurry to make dinner for date night.  It was actually pretty delicious, could have used some more spice, but that’s just me.  You will notice my I have an obsession with crunchy and spicy foods.

Because I felt bad that I was making tacos out of a box, I made some guacamole with my new food processor I got for my birthday (It’s a Cuisinart, and her name is Elloise).  I paired the rest of my tacos with gluten-free taco shells from the freezer section at HyVee, diced red onion, black olives, salsa, and guacamole.

For my Guacamole Goodness I used:

2 ripe avocados

1 good-sized clove of garlic diced

1 green onion diced- all of the white, and an inch to 1 1/2 inches into the green

1 tomato cut into small-ish pieces (you can also use salsa as a substitute)

1/4 C red onion diced

salt, pepper, and red pepper flakes (or hot sauce) to taste

juice from 1 lime

1 medium jalapeno (cut open, slice out the sides and white insides, then dice the green outer pepper)

Add all ingredients to a food processor or high-speed blender, I did mine on low for about 15 seconds to leave a few chunks in it, blend longer for smooth consistency or for less time for a chunkier guacamole

(If you leave the pits of the avocados in the guacamole when you return it to the fridge it will help the guacamole from looking gross- it keeps it from browning as quickly because there are no preservatives, and the avocados will naturally begin to look bruised up.)
